Spring is definitely in the air at The Ruby so here’s our pick of Spring Indian dishes!

As the nights get longer and the days get (a little) warmer, we’re working hard to prepare dishes perfect for cozy Spring nights in and the April nights sat outside in the garden, listening to the evening birdsong with a couple of cold drinks!

In our opinion, when it comes to Indian cuisine, Spring is all about zingy freshness. We can leave behind the food we normally eat over the colder months, the soups, the stews and the comfort food and we can start to open up to find something fresh and tasty.

A great place to start if you’re looking for a traditional Indian Spring dish is a Chicken Jalfrezi. It’s packed full of sizzling meat and vegetables, and the amount of chillis pack some real zing to each mouthful. It’s great for Spring because it doesn’t come with a heavy gravy like some Indian dishes do. A great side would be Bombay Aloo, potatoes without the heaviness of a roast potato.

If you like your meat grilled, we’ve got a wide range of Tandoori Grill dishes available. All our Tandoori dishes are prepared in a delicious marinade of mixed spices, yoghurt and fresh herbs. Chicken Tikka is cooked off the bone as a breast fillet or cooked in Garlic on the bone with the Garlic Chicken Tikka dish. If you’re really looking to mix things up, our Tandoori King Prawns are bursting with freshness, perfect for a warm early Spring evening.

If you’re looking for something a little less formal, we absolutely recommend our Kati Rolls. They contain a range of delicious authentic fillings, freshly cooked with mixed spices, onions and green peppers, wrapped in a fresh and thin chapati bread. They’ve also proved incredibly popular since we launched all four roll combinations. We have both meat and vegetarian options, with the Bombay Cholla Roll stuffed full with tasty potatoes and fresh chickpeas.

Our Specials are always worth a look – and the Ruby Biryani may be the pick of the bunch. If you read last month’s guide to the Biryani cooking style, you’ll already know just how much taste is packed into this dish. It’s full of flavour with fluffy rice combined with Chicken Tikka and small, crispy Onion Bhajis. The sauce is our homemade special, slightly hot but not unmanageable and the tangy taste adds that much-needed Spring Zing!

For a medium heat dish and something a little different, why not try our exotic Goan Xacuti which is an exotic dish, cooked with mixed spices, fresh garlic, ginger and a hint of red chilli. Cumin seeds and curry leaf are the soul of this dish, added to simmer and cook with the curry. They add a deliciously rich, nutty and earthy flavour and aroma to this amazing curry.

My personal favourite is the Bengal Chana Chat which is a very popular traditional home style dish cooked with chickpeas and chat masala, a spice mix which gives this delicious curry a zingy, tangy and slightly hot flavour. It’s garnished with chopped tomato, cucumber and fresh coriander. It makes my mouth water just thinking about it!
